6 boneless pork loin chops (1 inch thick) In a skillet, brown pork chops in oil over medium-high heat. Meanwhile, prepare stuffing according to package directions. Spread pie filling into a greased 13-in. x 9-in. x 2-in. baking dish. Place the pork chops on top; spoon stuffing over chops. Cover and bake at 350 degrees for 35 minutes. Uncover; bake 10 minutes longer or until a meat thermometer reads 160 degrees. Yield: 6 servings. Broccoli Waldorf Salad
6 cups broccoli florets In a large serving bowl, combine the first four ingredients. Drizzle with dressing; toss to coat. Refrigerate leftovers. Yield: 10 servings Nutritional Analysis: One ¾- cup serving (prepared with reduced fat coleslaw dressing) equals 87 calories, 4 g fat (trace saturated fat), 3 mg cholesterol, 133 mg sodium, 14 g carbohydrate, 2 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1 fruit. No-Bake Cheesecake Pie
1 cup vanilla or white chips In a heavy saucepan, melt chips over medium-low heat; stir until smooth. Remove from the heat; stir in cream cheese until smooth. Fold in whipped topping. Pour into the crust. Cover and refrigerate overnight or until set. Just before serving, sprinkle with toffee bits. Yield: 6-8 servings. Bacon-Tomato Bagel Melts
2 bagels, split and toasted Place bagel halves cut side up on a baking sheet. Top each with two tomato slices and two bacon strips. Sprinkle with cheese. Broil 5 inches from the heat for 1-2 minutes or until cheese begins to brown. Serve with ranch dressing. Yield: 4 sandwiches. | |||||
